Tonight I am making Cataplana. Cataplana is a type of stove top pan with a lid that open and closes like a mussel shell, kind of like a wok with a lid. Cataplana is also (I think) the seafood dish that shares its name.
So, ze plan is olive oil, garlic, a little cracked all spice and black pepper, some fennel seed, diced onions, white wine, tomato, bell peppers, and the seafood. All in that order. Served over white rice or potatoes.
Seafood can be anything. Mussels and clams are best because a) taste, but also b) cataplana is a double-sided pan; the lid is the same shape as the bottom. Its purpose is to have enough room for mussel and clam shells once they're open.
